I think that in order to comply with UK banking regulations all banks with a UK banking licence will need you to provide the name of the payee to allow them to check you are paying who you expect to be paying. Your details may not appear on their bank statement though as they may make the payments from a central account on their side.

That's not fully true, they do indeed ask for a name to clarify but its only for your own safety not the banks. For example, I use my family's nicknames even on banking, it does crop up saying the names don't match but you can just ignore it and continue.
