I work over in Edinburgh a fair bit and from experience (good and bad!) over the years, I'd say New Town and London Street saunas are, by far, the best. As to the girls and services, as you say, it's sorted in the room and very much a matter of preference and pot luck. Most girls will provide the services you are after in both of these saunas.
New Town has mainly Scot's girls of late but you could easily get a fair number of EE in LSS and, as I'm sure you know, they can be a bit cold with plain vanilla service.
Stick to NT and LSS (both only a few hundred yards apart) and those Scots girls and you're more likely to nail what yer after!
