On average, they agreed there's no stereotype client that seeks out escort services. They also agreed that client demographic depends on the time & day one's open for business. For instance, in the morning on week days you get a lot of gray-hair fellas whereas in the afternoon it's mostly middle-aged men who finished work early except their families think they're at work until 5. Young guys, incl. good-looking students, body-builders etc (i.e. folks you'd think don't need to pay for sex) usually come in the evenings. One WG told me she refuses point blank to meet new clients on weekends because she can't handle drunk or hungover guys.
EDIT: What was interesting to hear them talk about was what the situation is like from the other side. I mean, what age of escorts do the guys visit the most? As expected, teenagers and WGs who look like they're teenagers get the most traffic, regardless of their actual looks. But then it's the MILF/GILF's who are the busiest and can usually jack up their prices. Whereas women who are/look mid to late thirties ...well, apparently that's the worst age for a WG which usually means (unless she's a ten) that she has to go down with price, or move to a different area and setup a new profile that makes her look younger. Apparently, dying hair blonde also increases client interest considerably.
