I've been trawling through Birchplace for a suitable shemale, but they all seem to be tourers, mainly from Brazil.
Does anyone know of a reliable girl that you could recommend for my first dabble.

When searching on Adult work have you tried the local escorts tab then just choose trans then Edinburgh?

Usually brings up a decent amount.

...and note that you will need to search both 'Male Trans' and 'Female Trans'.

They will almost certainly all be male-to-female Trans, but Trans girls will put themselves in either category.
