The risk is unavoidable whether you use an MNO, MVNO or something like Cloud SIM; an online organisation that can be hacked or compelled for the info which can then be abused by criminals and unscrupulous/inept authorities (aka more criminals).

There is no such thing as absolute privacy today. You have to make compromises. We give up privacy in exchange for convenience many times a day.
 
For instance, I have a G-mail account for convenience despite the fact that they read my email for better ads

Online texmex

No good if your Missus uses your phone though! Mine can unlock mine with Apple Touch and she often borrows it to call my family or text the kids. I think I'll stick with my punter iphone that justs sits around the house with all the old iphones that we've built up over the years.

Just delete the app once business is done. Reinstall it again when you need to make a booking. Purchases can be restored. (at least on iPhone)

I like the idea of cloud sim, hushed and the like but I have to agree that there is nothing as safe as a spare phone with a PAYG sim bought from the supermarket with cash. Three have a decent tariff on PAYG of 3p per min, 2p per sms and 1p per mb of data - put that in an old iPhone/Android and you’re golden. Leave it at work if you’re not punting that day and if you need to take it home that night after, then it can become the phone for whoever is on call at work ... just remember to put a few work related names on the contact list like help desk or on call manager.

PS I have no affiliation with Three/iPhone/Android, I just have used them and think they are ok.

Haven't tried watsapp as yet with cloud sim..text and call does it..though doubt android or iphone ecosystem would allow multiple watsapp's on a single device

On Samsung Android phones there is a secure locker sandbox where you can have completely segregated app instances
