If you decide (say) to spend the weekend at a picturesque country hotel, the "experience" starts with the communications. It's not just about the night in the room. So if you ring and encounter indifference – or e-mail and get a disorganised or barely civil reply – you take your business elsewhere.
It's surprising how many escorts don't seem to understand that what they're selling isn't purely bedroom time. They're also selling, to some extent, an overall experience. Just like a hotelier.
Now I don't want to overegg this. We know they wouldn't dream of take their kit off if we hadn't put money on the table. They know we know. We know they know we know. (But then we also know that the reason the hotelier offers good service is that he wants our business.)
Others may not agree, but I quite often lose interest and take my business elsewhere if the communication stage is very poor. One doesn't expect much.
My guess is that any escort who went so far as to slip in the odd – of course entirely fictional – comment such as "Looking forward to meeting you!" into her e-mails would do a lot more business than those whose e-mails are perfunctory.
After all, another thing they're selling is fantasy – and, for a male, to feel that an attractive female genuinely wants to see you is a surprisingly potent fantasy...

As you say these women would not be doing what they're doing, if there was no payment involved. And that's fine.
But they're providing a service in more ways than one, and it would go a long way if the woman gave some more than the perfunctionary reply.
I worked for an international company and part of the deal, especially with our Nigerian clients and Middle East clients, was to have working women who could be brought anywhere and who would be able to hold a conversation, as well as being able to perform in the bed room.
Our company fixer was superb at selecting the right women to fit the bill. Even if they loathed the John, you'd never tell with any one of these women. They were cute enough to know that a little sugar goes a long way, even if they were getting paid very well for their services.
It's beyond coincidence that these working girls the majority of them were well educated.
