Feels like unless you're in Glasgow or Edinburgh there's not much choice atm, the one brazilian I was trying to line up for the weekend has gone to Glasgow so any chance is out the window.

I see a bunch more in VS Falkirk but they are all apparently called Roxi and without review, I'm tempted but nervous, I assume I'd have to roll the dice and be the first through the wall?

It's always a grass is greener situation. I moan about Dundee being shit compared to Aberdeen. Aberdeen complains how it's shit compared to Edinburgh, Edinburgh about Glasgow, Glasgow about Newcastle etc etc.

I appreciate what you mean in terms of pure numbers o.p. however the choice when you take out poor service providers and not matching personal preferences is poor no matter where you are.  I am in Glasgow but feel the good s.p. have out priced themselves, the great are retiring etc.  Sometimes you need a change of scene, my family are off on holiday without me in the summer due to work for me but I will have a day or two free to head to Edinburgh and enjoy the scene there.  Might even check Newcastle.  This can make all the difference.
