I always go for incalls but I'm finding a lot of the workers I'm into only do outcall.

I'm hopelessly inexperienced with hotels and a bit anxious.

Are there any types of hotel in particular that are best suited?

Any kind of protocol? Do you get any fuss if you check out only after a couple hours? How best to be discrete?

Are staff used to it/not nosey?

If you book a hotel for a day, is it a bad idea to have a few girls to get your bookings worth?

Some places have seperate buildings like dorms so you don't need to go through reception. Any types of venue like that I should look at?

Are there any good short stay/last minute types of venue?

Alternatives I didn't think off?

You're overthinking it.
Just look at large hotels that don't have an elevator that needs a card.
All the rest is superfluous, receptionists really don't give a damn.
Btw, there are quite a few websites that allow you to rent by the hours rather than for a full day.
All this being said, if I rented for a night I would never check in a couple of hours after, it would just seem extremely strange.
Never had an outcall, just common sense

avoid any hotels that use "Parkingeye" or similar to monitor the car park as you may find you get a £100 bill - or the prossie may refuse to come

I do most of my outcalls bookings to hotels I am using when travelling. Always book 2 guests but have never had any problems at any hotel. I always meet the escort at the entrance or in the bar. It is non of the hotel’s business who I have in the room, and tbh I don’t think they care. Good advice about the parking, more and more hotels are using outside firms to control parking. Most of my hotels are in city centres so public transport or taxis seem to be escort’s usual mode of arrival. Don’t overthink it, just book and enjoy.

If you want to leave the hotel early just leave the key/card in the room and say nothing to reception, I have done that on a few ocassions.

I've had outcalls to hotels and also rented apartments through AirBnB and similar sites. If the WG is happy to come to an apartment then I think it's generally more private and relaxed. Also it's a bit easier to keep food and drinks etc in an apartment if you are there for a day or two.

Larger hotels are the most anonymous and I have found the nicer the hotel/room amenities the more the girls tend to relax and overstay...making for a more enjoyable session....offering them a drink from the mini also sweetens the atmosphere...

Hotels that do not have key-card access to the lifts are best.  It allows the WG to enter on her own and easily get to your room.  There are plenty in London.  The cheaper hotels often times have key-card access.
