Why would they work for £7ish an hour when all they need to do is pick up just one extra half hour punt and make more money on that than on day at wherever.

I would say, this is to make them self look legitimate, especially when earning wages

If the escort didn't have a proper job, how does she explain where all the money comes from, especially if she has told her dad she is unemployed, but she earns £2000 a month

so having a job, even if it a real job, gives her a real cover story

There could be a variety of reasons.
Some don't want to be full time prossies but are willing to work occasionally to make a few extra bob because they only earn 7 quid an hour in their regular job.
Some would like to be full time prossies but aren't very good at marketing (or arent very attractive) so can't get enough clients.
Some have only recently started and are just testing the water.
And I know of a stripper who worked a day job 5 days a week for less than she could earn in a decent evening getting her kit off because she had to demonstrate a legitimate source of income when applying for British citizenship. There must be prossies in the same boat.

lets say you was a manager/ employer, you found out that one of your staff is currently working as a prostitute outside of work hours.

While that is technically none of your business, it could reflect badly on the companies image if other staff/customers started to find out.

As supply goes up - (generally) prices come down
As demand goes up - (generally) price goes up

I love a good conspiracy theory....personally, I think the drop in oil prices are a combination of the US trying to fuck the Russians over, and the UK recognising that it's an election year.

I think us in the UK are just fortunate that this is the way that it fell. I was in the US recently, filled a fucking truck with no idea how much petrol but it cost fuck all....and that was before the prices fell. and they were complaining then!

my 2.0 Diesel cost at least three times that for a lot less fuel - back then.
