We keep lying to ourselves....
Maybe there is a UKP type of influence where we read everyone else having a great time with a wide array of services and we're looking for something similar. The good old days where the pro$$ie was pleasantly attractive, a welcoming smile and a basic service, delivered with aplomb, at a price which didn't break the bank.
A brief description gave you a broad inclination of what to expect on arrival with no real idea of what you'd get in the way of services, was part of the excitement. Now we're lured in with photo shopped images or B&S, the price may or may not be for what's on offer, with a collection of extras. Instead of a simple transaction with your mind on the job at hand, the big brain kicks in and you're in a negotiation.
Personally I have never been as well off or paid as much, instead of a day's pay to have some fun it costs me half a day. Price is not my biggest issue, or it wouldn't be if the pro$$ie looked like the image I'm attracted to and she provided the services I'm paying for.
