Don't think the place in Broadway in Cardiff has ever had a large minder - Corus Boy would be the one to confirm this though, as frequent visitor in past, even if not now.
Prefer when there'a an "Auntie" though, like when they were in St P's. Never quite sure of how things work between the girls and the "Uncle" on the spot, although their main job usually seems to be to do the cooking.
Broadway has an 'Uncle' he is a fair size but not intimidating and could not be more polite, ready with a cuppa when you have to wait. I couldn't be sure but his demeanour and personality do not lead me to believe he is minder material but if he took a swipe with one of the woks lying around, who can tell.
Back in the Claude Road days there was Mr Li, tall, heavy set, shaven head and very intimidating but again I never saw him behave in anything but the best style of Customer Relations. Once I was waiting in the spare bedroom at Claude Road when a third customer arrived. Mr Li politely explained that there was an hour wait and asked the guy to come back later. He started kicking off that he was a regular and shouldn't have to wait, Mr Li explained that he wasn't the only regular waiting but that the other customer, me, had booked via the telephone girl so there was nothing to be done. The customer kicked off again and Mr Li said that if the guy didn't leave now he would call the Police. That settled it and the guy left. I saw him from the back as he left via the alleyway and if Mr Li had tapped him he probably wouldn't have stayed upright.
I learnt from that these Asian places do not want trouble, calling the Police was probably a bluff, but these places can only exist if they stay below the authorities radar so having a minder manhandling a customer is not on the cards. IMO.
On the other matter of the Asian B & S situation. I agree that it is B & S and not good but equally seasoned Asian punters do know the score, even to the lies that the Telephone girls will tell when you ask for a description. It's the way it is.
But thanks to this site older hands can help educate newer punters and to the bottom line even if the girl you see, if you choose not to walk, is not as the advert or description there is still a good chance that you'll get a reasonable service. OK OWO will cost you an extra £10 with chancers asking for £20 and kissing is not likely to be offered;
It will still be a better deal than 95% of Romanians.
snaitram99's other points are quite correct, Uncle or Auntie are there to cook and clean, open the door, escort customers in and out, handle booking from the Telephone Girl and to look out for the 'Owner's Interests.'
When an Uncle is in situ, he is there to work not play. Many years back there was a new uncle in one of the Asian places I used. Late one evening I received a call from the girl, who I had know for some time, she asked me if I could come to the shop straight away. I did and she was waiting outside down the road a bit with her bags. I stopped and she climbed into my car and asked me to take her to the station, she was obviously distressed. When we got to the station the last London train had left, so she eventually told me how she had to leave the shop as the new 'Uncle' had tried it on with her. She spent the night at my apartment and told me that she had never been in that position before and in the morning she would call her 'boss' to report why she had walked out.
I took her to the station the next morning. The following Monday there was not only a new girl but a new 'Uncle'.
